Japanese Teriyaki Sauce is a thick, glossy cooking sauce with a deep brown colour and a rounded, sweet-savoury flavour. It pours smoothly and clings well to meat, fish and vegetables, making it well suited to glazing and marinating. Use it to coat chicken thighs or salmon fillets before grilling or pan-frying, or stir it through vegetables and noodles for a quick teriyaki stir-fry. It also works well brushed over skewers on the barbecue, stirred into a wok of mixed vegetables, or spooned over rice bowls for extra depth of flavour. Keep the bottle in a cool, dark cupboard before opening, then transfer to the fridge once opened and use within a few weeks. Shake well before pouring, as the sauce can settle, and add it towards the end of cooking so it glazes rather than burns.
