Moong dal is the dish this bean is best known for, made by simmering the beans until soft and finishing with a simple tempering of spices. East End Moong Whole Beans are small, oval, green pulses sold whole, with the skin left on. These beans are a everyday staple in Indian and South Asian home cooking. Beyond moong dal, they are used to make khichdi, a comforting one-pot rice and lentil dish, and are often cooked into thick curries served with rice or flatbread. Many home cooks also soak and sprout the whole beans, using the sprouts in salads or light stir-fries. To prepare, rinse the beans well before cooking to remove any dust. Soaking them for a few hours, or overnight, helps them cook faster and more evenly, though they can also be cooked straight from dry with a longer simmering time. Once cooked, they hold their shape reasonably well, making them suited to both soupy dals and firmer side dishes. Store the beans in a cool, dry place in a sealed container or their original packaging. Kept this way, they will stay in good condition for cooking over a long period. Use dry beans within a reasonable time for the best texture, and keep any cooked beans chilled and use within a few days.
