It's a straightforward pantry spice, the kind that gets reached for automatically once the onions are softened in the pan. In real cooking it goes into everyday dishes: a pinch stirred into a chicken or vegetable curry, a spoonful added to dal as it simmers, or a dusting through rice before it cooks to give it colour and depth. It also works well mixed into homemade spice blends alongside other herbs and spices from the cupboard. Keep the lid tightly closed after use and store the jar in a cool, dark cupboard away from direct light. This helps the colour and flavour stay strong for longer. A dry spoon should always be used to scoop it out, as any moisture in the jar can cause the powder to clump.
